Ultimate Healthy Burritos

Tired of not having healthy choices especially on days like SUPERBOWL SUNDAY?  Enjoy this super simple recipe ~ my Ultimate Healthy Burritos!  I can’t wait to have these tomorrow!

ultimate toasty burritos 
Ultimate Toasty Burritos 
2 cups cooked quinoa
2 cups black beans (organic canned ok)   
2 bell peppers, red, orange, green (your choice/mix)
2 medium onions
5 limes
1 bundle cilantro, finely chopped
1 dozen organic tortillas (your choice: gluten free, spinach, whole grain, regular)
Salsa – optional (your choice of your favorite homemade or store brand salsa)
2+ avocados
1-2 tomatoes, diced
Cook quinoa (cooks like rice).  After it’s cooked, squeeze juice of 3 limes over the quinoa, add ½ bundle of chopped cilantro & give it a toss to blend it.
Warm the black beans.
Lightly sauté onions & bell peppers with a little (1-2 tbsp) olive oil or coconut oil.
Warm tortillas & begin burrito making! 
Take a warm tortilla, evenly layer: quinoa, black beans, veggies (add salsa if you desire), fold 1” on each end of the burrito and flatten.  Place on a cookie sheet. 
Toast the burritos on each side for a few minutes either on a warm skillet or in the oven.
Enjoy with guacamole!
Simple guacamole:  take 2 avocados, scoop into bowl add ½ finely diced onion, diced tomatoes, ½ bundle chopped cilantro, juice of 1-2 limes, dash of sea salt, mix well!
